Does anyone know how to find a track of "Got My Mojo Working" that does not include harmonica or singing?

You could check out the songs at last.fm here. Some versions have horns instead of harmonica but it might take a bit of searching to find one with no singing that's professionally published.
That being said this version by Alexis Korner is dying for added harmonica, lol.

I was reading on the Audacity forums that on many tracks vocals are recorded right down the center as far as panning goes. Since musical instruments are frequently panned left or right, with some work you can sometimes remove vocals or specific instruments by mirroring and at that point my eyes glazed over and I stopped reading because it was getting really complicated, but in theory, with some work you can remove tracks.
There has got to be a better way though. I know I had a CD player that had a faulty headphone jack that used to cut the vocals out, so I know on some mixes the info is separated out. There might be some karaoke software that could get you what you need, although depending on how a specific track is recorded that can be harder or easier.

Something tells me those older recordings would be mono.

Unfortunately, that version isn't much use to me. I can't sing a lick. I have a very bass, monotonic voice that provokes laughter when I try. This is a huge disadvantage because although our lead singer is a great singer and accommodates many of my inputs, if he doesn't want to sing it, we don't do it. I have good versions of Trouble No More and Baby Please Don't Go just waiting for a singer.

I have a "Band in the Box" version of it. If you need a special key, let me know and I'll generate it for you. The "live" version Heart2Harp posted sounds better. Also let me know if you prefer WAV or MP3
