I've thought about this sort of thing - not at this level - and always tell myself to do some before/after clips, but then I get sidetracked.
Really, the excuse for me, is that it is hard to limit the variables when playing. This is easy to do at every level other than the human.
For example, you can do amp settings by looping the same loop into both rigs.
I can't think of how you could easily recreate the harmonica playing other than maybe using the music store tool (what's it called?) that blows/draws chords and single notes. However, it doesn't help the listener with bends, overbends, or overall reaction.
I have a condenser mic that might be worth playing around with. I'll see what I have lying around for same model/key harps that are OOTB and then customized.
***I am assuming if you did a before/after and played as closely as possible both times, you could not only hear the differences, but see them using a basic frequency analyzer? ---------- Mike VHT Special 6 Mods Quicksilver Custom Harmonicas - When it needs to come from the soul...
