Just wanted to know what the outcome was with your experiments using piezo? I'm going down that track at the moment and finding the results to be quite reasonable. I'm talking about harp mics by the way, not pickups for guitars or stompboxes.
Just wanted to try using something different from my low impedance dynamic mic which is perfectly OK but I want to try and get down and dirty.

Hey tooka! Ultimately, I sort of gave up on piezo's... I DO think that they can be made to work, but because I've gone the route of digital modeling pedals and such, I've found that sticking to dynamic mics just works better with all that...
I think the KEY thing to getting a good sound out of the piezo will be more in the preamp than in the mic itself... Piezo's have very different output than do dynamic mics, and so have a tendency to sound "shrill" when fed through a standard preamp. If you don't want to go through the effort of making your own preamp (which, by the way, can actually be quite simple: Tillman Preamp, Piezo Preamp, Radioshack Piezo Pre), you might get very good results simply by using an amp meant for acoustic guitar (which generally use piezo pickups)....
Good luck, and keep us informed!

Thanks Isaac. The links look interesting. I expect I'll probably end up going down the digital modelling route too but I'll explore this further first, I have too many toys and distractions already :) ----------
