Hi I have a Astatic Ceramic MC127 element from 75 that I want to use. Any suggestions?

I'm not sure what you're asking us. My advice is: Treat it with care. Personally I'd stick it in a JT30 mic shell. If it doesn't have a gasket then get one from www.harpmicgaskets.com.

Ceramics are basically man made crystals and can take more temperature extremes and banging around than a crystal will. The ceramics made from the 70's and earlier are nicer elements than the ones made after the mid 80's. I suggest red with beef, white with fish.
With chicken, you could go either way.

I just called CAD Audio (Astatic); they don't have any MC-127 elements.

Astatic may have some kind of ceramics left though. My first bullet was a Bluesblaster and the pot went out on it. When I sent it in under warranty, they sent me a JT30 Roadhouse instead. I actually liked that mic better, but when the element died on it, I opened it to find that it was a ceramic instead of a crystal like the Bluesblaster had.

I agree with Kingley. A JT30 or maybe a T3 if you can find a shell. I've found flea markets to be a treasure load on old mics. But another option you might consider is building your own mic out of something novel. Here's a neat collection of ideas:
