I have read or heard both of those stories and I don't doubt they are true. In Miller's case I have heard recording of him being pretty abusive to the engineers and backing band in studio. Walter was part of the original Headhunter crew with Muddy in Chicago, where they went in several places and stole house band gigs. When Walter went on his own I think he was known to throw people off his stage if he didn't like what they were doing.
Both of these guys had a relationship with alcohol, which can have an impact on one's actions.

In thinking about the SBII thing I recall hearing from Clapton's own mouth about that episode.

Alcohol and temperament were issues for both. A lot of sessions were done at Chess after guys had played all night, so between drinking at the club and sessions after midnight there were pedictable problems.

Walter had a temper, drank, and was a womanizer. So you know where that goes. One angry boyfriend threw a bottle at him on the bandstand. A 16-year old Luther Tucker, on guitar, saw it out of the corner of his eye and pulled his head back. The scar you see on Walter's forehead (the cover of Hate to See You Go album) is where it hit.

And Tucker related that Sonny Boy had two pints a night - one under his foot on the bandstand, and the other for his pillow, to go to sleep on.
