From time to time I spot jars or tincans cupped into hands of harmonica players. Is this some kind of mechanically amplification?

What i think your talking about is playing with a mug.

Check out jason riccis video on it. It makes a very distinct sound. Many artists use this. Steve guyger .. Paul oscher ... Rj mischo ... Jason ricci .. Its very neat lil trick. Each mug sounds diffetent too. So go through your whole cabinet and try em out ... Lol

Yeah . . . there are a number of tin can/ beer can mics out there. I recall (back when I used to build/sell them) that several of the folks who were selling cigar box guitars branched off into making DIY harp mics.

I don't want to plug any specific sites or products, but if you do a Google search for "tin can harmonica microphone" you'll find plenty of info/instruction/items for sale.

It's kind of in the same vein as the "mason jar amp."
