I have a basic music theory question. What differentiates minor blues from "regular" blues? Are minor blues simply played over minor chords rather than major chords?

blues played by those under the age of 18 of course! ;)

you pretty much got it although there's some different chord treatment especially with the b6 chord often occuring in the last 4 bars.

Basically yes you replace 7 chords by minor or m7 chords
Also often the turnaround might differ
instead of going V7 IV7 I7 V7
you can get bVI7 V7 Im V7 or variations around that

check out the thread and video I posted 2 days ago Footprints it is a jazz standard that you can consider as a minor blues even though it has a few twists

it can be all minor. for example Dm,Gm,Am.

or a song that stays on one minor chord the whole time.

sometimes the one and four are minor but the five is major. Dm,Gm,A.

sometimes the one and four are minor ,the five is major and you add a sharp five too. like Dm,Gm,A,Bb

there are songs wherein they go off the minor one to a major five.Bm,F#

and other variations, like a flat four,

etc.

ooh yeah, also sometimes the relative major gets thrown in too. like you are playing in Dm and an F gets thrown in.just like in any type of music.
that happens a lot in klezmer.

Try "Cold Cold Feeling" from Albert Collins. Classic minor blues structure, signature Albert Collins guitar moves.
