I picked up a Promaster valved D from the Amazon sale.
I would like it to not be valved. Is it as simple as just peeling the valves off?
Is there anything about the reeds that would prevent me from doing this?

Just rip them off. You'll have to clean some glue off too. It comes off easily, as long as they haven't spilled it on the reeds (I had one where the 6 blow reed was glued into the slot... ----------

Try leaving it on holes 7 and 8 for the draw bends on top.
