Well I am not 100% sure, but I think it's Les Stroud (Survivor Man). He has been a professional musician for quite some time, currently the harp player for the band Les Stroud and the Pikes. He does all the music for his show Survivor Man; I think he plays all of the instruments himself actually. One great musician. It only seems logical Discovery would use him for other shows too.

Don't know about mythbusters, but Kim Wilson was playing on "Dog The Bountyhunter" the other night. They gave him credit at the end of the show.
