I wish I could go Harvey.
Item 3 on your list of questions- If it were me I would get my legs in good shape so as to be prepared to walk around and ride the subways, that's a big part of the fun in NYC. You walk around, maybe meet some people, but you can trip around just about anywhere in manhattan and by happenstance you walk up on something like the village vanguard, the brooklyn bridge, the apollo, carnegie hall there's something going on just about anywhere you turn.
As far as the other things on your list- steakhouse, clubs, italian, deli.., man are you ever in the right place.
I would just usually pick a place that looks about right and get a table. If I don't like the food they have there I know that I can just pay and leave because the nearest great resteraunt is usually no more than a quick move over from anywhere I'm at.
Just like down south the people there are a major part of the fun but the vibes are different in certain ways.
So maybe a walk around central park with a bottle of wine, a walk around greenwich village, any kind of museums that you both like, the music clubs. Like in New Orleans the music and the food could easily take up all your time if there's a lot going on for that weekend, eat something weird because they have food there that is prepared by people who come from every part of the world so you might not get anothr chance to try that stuff anywhere else.
