@shbarmac:

A new option!

@Kingobad:

Inventive!

@ridge:

The eggs are from Mercia, if that helps?

I'm a modified c) option man.
- pin hole in large end
- do the slow boil 9-11 minutes depending on desired runniness
- cool egg in running cold water
- hold egg on side in palm, sharp strike to top of head on side of egg. This should result in small round impact depression with a crack running around the egg on the 'equator'.
- carefully pull open the crack until you can remove the cooked egg leaving the shell in two complete half pieces, sometime still joined in one piece.

(yes I peel my oranges in one whole peel as well! But in a spiral.)

If I'm cracking raw eggs, it always in the middle. The only trick that works with peeling hard-boiled eggs is that you must NOT use fresh eggs. Older eggs have the membrane lining the shell partly broken down, resulting in easy peeling. I have a few chickens, and peeling a fresh hard boiled egg is damn near impossible! This thread caught my eye immediately, because last night I helped both my kids package a raw egg that will be dropped from a second story window today at school! If it doesn't break, you get a prize.

Similar to Bluemoose. I live in the city so I doubt my eggs are very fresh. Cool the egg down a bit in cold water, allowing the good stuff to contract away from the yech. Gently tap the top to destroy the integrity of that end. Then peel away from the top. All in one piece or not, doesn't matter. Also, I do it holding the egg under the surafce of the water so the yech naturally washes away.
